低温で“豆ごと焙煎”することで、ラベンダーや紅茶、バラ、マスカットを思わせる、華やかで鮮烈な香りを丁寧に引き出しました。
使用するのは、エクアドル・アマゾンの原生林に自生するクラレイ種の野生ホワイトカカオ。
わたしたちの仲間のキチュア族の26の家族が、樹高30メートルを超えることもある数百年の古木から、手作業で一つひとつ収穫しています。
2025年の収穫量はわずか110kg。
純粋なクラレイ種のカカオを使ったチョコレートは、世界中探してもほとんど食べることはできません。
