Introducing our new bonbon chocolates made with Dictador rum, on sale Thursday, October 28, 2021!

These bonbon chocolates (6 chocolates in 2 types) are made with 2 types of aged rum from Dictador, a family-run business that has been making rum for 3 generations since 1913 in Colombia, located north of Ecuador.
A limited number of these chocolates will be available at the main store in Akasaka Mitsuke and at the online store. The sale will end as soon as they are sold out.

Founded in 1913, what is Dictador?

Dictador is one of the oldest distilleries in Colombia. There are two main features of the distillery.

The first is that it distills only "Virgin Sugar Cane Honey" (sugar from sugar cane made into syrup without any refining).

The second is that the rum is aged in the solera system, which is rare for rums (sherry is aged in additional barrels).


Two types of XO rums in bonbon chocolates

here are two types of rums used this time.

XO Perpetual (gold bottle) and XO Insolent (silver bottle).

XO stands for Extra Old, which means that only rums that have been aged for more than 6 years are used, but Dictador's XO Perpetual and XO Insolent are blended with aged rums that have a rich aroma of 25 to 35 years.


XO Perpetual

XO Perpetual is a blend of sherry and port casks with a solid core of depth, a fine brown sugar-like sweetness, a savory aroma and a hint of spiciness.

The long-term aging and the blending of a variety of raw materials expresses a complex and deep flavor.

To take advantage of its deep richness and complex flavor, the ganache is made with dark chocolate from Ariva cacao.


XO Insolent

XO Insolent is made from sherry and port barrels that have been re-charred to produce a robust maple syrup sweetness, vanilla notes, and a subdued bourbon-like oakiness.

It is very smooth, without any spikiness due to the long aging and rechar.

To make the most of its rich and expansive sweetness, it is made into a milk chocolate ganache with aribacao.

Both rums have such a wide variety of sweetness that you would think there is sugar in them, but while you can taste the similarities, they branch out in the middle and each has its own unique characteristics.

This is a very interesting rum, and the chocolate makes the characteristics stand out even more, so please enjoy comparing them!
