Founded in 1913, what is Dictador?
Dictador is one of the oldest distilleries in Colombia. There are two main features of the distillery.
The first is that it distills only "Virgin Sugar Cane Honey" (sugar from sugar cane made into syrup without any refining).
The second is that the rum is aged in the solera system, which is rare for rums (sherry is aged in additional barrels).
Two types of XO rums in bonbon chocolates

To take advantage of its deep richness and complex flavor, the ganache is made with dark chocolate from Ariva cacao.
XO Insolent
XO Insolent is made from sherry and port barrels that have been re-charred to produce a robust maple syrup sweetness, vanilla notes, and a subdued bourbon-like oakiness.
It is very smooth, without any spikiness due to the long aging and rechar.
To make the most of its rich and expansive sweetness, it is made into a milk chocolate ganache with aribacao.
Both rums have such a wide variety of sweetness that you would think there is sugar in them, but while you can taste the similarities, they branch out in the middle and each has its own unique characteristics.
